Chicken quesadilla is one of the least dishes that my entire family likes to eat. Normally I’d make a few different meals for one dinner, to make sure they all have what they like. Making individual quesadillas is quite time taking. So I came up with this “cake” version, just to be done with large dinner within a short time period. And I call it “chicken quesadilla cake” because it really looks like one if decorated properly and served on a cake platter. And that’s what I do ! This is also a really good idea when having a large crowd over for dinner, since the slices turn out quite filling, even when cut in small pieces. Well it’s tortilla layers topped with cheeses and chicken,you can’t expect a light meal when bread and cheese are present.And by the way ,I also make this as vegetarian, using mushrooms,sautéd with onions and spices ,with added fresh peppers and greens.Flexible recipe and meal, you can make it to your taste and preference.
