I chose to cook this in my Crockpot on high, but if you are going to be away from home for a long period of time, you can set your Crockpot on low and cook for 6 to 8 hours.

Slow Cooker Pineapple Chicken Ingredients:
15 Boneless skinless Chicken thighs cut into large pieces
24 ounces Pineapple Chunks (juice reserved) 1 large and 1 small can
5 Jalapeno peppers sliced (optional)
1 Large Onion (any type) Cut into chunks
1 Large Bell Pepper (any color) cut into chunks
4 Cloves Garlic (minced)
1/2 Cup Chicken stock
1/2 Cup Brown Sugar
3 Tbsp. Ground Ginger (or fresh)
4 Tbsp Soy Sauce (to taste)
2 Tbsp. Corn starch
2 Tbsp Water
