Monster Run Escape
This fresh and healthy Tomato & Basil Soup recipe is so flavoursome. It tastes great and is so easy to make!

Ingredients
3-4 Whole Tomatoes
2 cups room temperature water (about 500ml)
1 slice red capsicum (with seeds and stem)
1 small carrot
1/2 celery stick
1 shallot/spring onion (with root)
2 handfuls cashews
1 clove garlic (with skin)
1 small handful of fresh basil leaves
1 vegetable stock cube.
1 handful cabbage
1 small slice of red chilli (optional)
1 small slice of ginger (optional)
1 squeeze of tomato purée (optional for a deeper red colour)
pepper to taste
garnish with some basil leaves

Method
Put all the ingredients into the Vitamix container and secure the lid.
Select Variable 1 and walk up to high speed over 1 minute.
Blend on soup mode option for 3-6 minutes or until desired temperature is reached. (Raw Foodist like to only heat their soup to about 45 degrees so no enzymes are lost.)
Stop the machine and serve.
